They look so happy~ because they are! I’m sure most of my loyal readers have heard that we will be expecting junior in April. I celebrated with an ice water and everyone else enjoyed some red wine. We went to a celebratory dinner at the Rice Cafe. A great weekend had by all.

So~ I’m turning into a Whole Foods groupie. With free cooking classes, who wouldn’t? My friend and I went to a 365 Budget Friendly Dinner session. They used a bunch of their store brand 365 products. It was a lot of fun. First we sat and relaxed while Chef Allison showed us how to make three vegetarian meals.
One Pot Chili Casserole
Goat Cheese and Zucchini Frittata
Fusili Pasta with Roasted Tomatoes and “Hidden” Zucchini

Then we taste tested the meals. By far, the fritatta won our hearts--hello goat cheese! So easy to make at home too, and Mikey liked it!
I enjoyed the pasta one, but when I made it at home I added lemon zest, goat cheese, and parm. The star of that dish was by far the roasted tomatoes. Although, I think it is time to clean the oven--it smoked like the house was on fire. See funny story below *

You can find the recipes on their website if you are interested in making them. They do have a lot of good ideas.

Funny Story Below~
Years ago when I was living with my cousin Tara in beautiful Victoria, British Columbia we made some chicken in the oven. The oven smoked so bad we knew for sure it was on it’s way out. A quick call to our landlords at the time (now my in-laws) and the Sears repairman was on his way. The diagnosis was that it was dirty. How embarrassing. We thought it had malfunctioned but all it needed was a good cleaning~la sigh!
